THE SANITARY CULTURE STATUS OF FOOD SERVICE UNITS AT INDUSTRIAL ENTERPRISES: PROBLEMS AND SOLUTIONS

The sanitary culture of industrial canteens plays a crucial role in maintaining workers' health and productivity. Under conditions of intense labor and exposure to harmful factors, the rational organization of nutrition requires strict adherence to hygiene standards. This review article summarizes data from open-access scientific studies reflecting the current state of sanitary practices in industrial food service units. Key problems identified include violations of food preparation and storage technologies, low levels of staff hygiene training, and insufficient control of equipment cleanliness. The article discusses potential solutions such as the implementation of internal sanitary audits, regular staff education, the use of modern disinfectants, and automation of sanitary procedures. A comprehensive approach to hygiene in workplace nutrition is emphasized. Improving the sanitary culture of industrial canteens not only reduces the risk of foodborne infections and intoxications but also contributes to overall worker health, reduces absenteeism, and enhances labor efficiency.
